Growing a crop of Amaranth in your garden will give you so many new choices for eating throughout the year. Since Amaranth grows best in warm weather you can plant it after all danger of frost is past – around Memorial Day gives plenty of time for maturity.
Within just a few short weeks you can begin harvesting greens. Use leaf and stem of young plants in salads and stir fry long after your cole crops have bolted and lettuce is burned off. Leaves are edible all year until first frost by just picking the youngest and most tender.
Grain forms in the flower heads at maturity and is easily harvested. Just cut the head from the plant and let completely dry. Then use a clean, metal trash can and tap the heads lightly on the inside, letting the grain fall to the bottom.
If you get too much fluff in your grain you can drop it into a tub through a slight breeze. The grain will fall to the bottom and fluff will blow away.
