Homemade Bread “The Old Ways” And The New

How long has it been since you walked in the house to the smell of homemade bread? We all went through a phase using automatic bread makers, but now they are all at rummage sales for $5. The old ways of making bread were pretty labor intensive but well worth the effort.

Some of you probably have experience of making bread the old fashioned way by adding yeast, kneading and letting it rise, maybe more than once. For those who have never done it I'll include a basic white bread recipe.

Ingredients

  • 1 package (1/4 ounce) active dry yeast
  • 2-1/4 cups warm water (110° to 115°)
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 2 tablespoons canola oil
  • 6-1/4 to 6-3/4 cups all-purpose flour

Working The Dough For Old Fashioned Bread

In a large bowl, dissolve yeast in warm water. Add the sugar, salt, oil and 3 cups flour. Beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough.

Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.

Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in two greased 9×5-in. loaf pans. Cover and let rise until doubled, about 30-45 minutes.

Bake at 375° for 30-35 minutes or until golden brown and bread sounds hollow when tapped. Remove from pans to wire racks to cool. Yield: 2 loaves (16 slices each).

That's the way Granny did it, working at her bread making station with the old fashioned crank type flour bin above an enameled countertop. She got to stay home a lot, and her and Grandad's favorite meal was brown beans with ham and homemade rolls.

7 UP Quick Bread

That's an awful lot of work for most of us now days, so I use a quick bread recipe that I like just as well and can be made in just a few minutes. Here's the recipe:

Ingredients

  • 3 cups flour
  • 1 TBSP baking powder
  • 3 TBSP sugar
  • 1 tsp salt
  • 1 (12oz) can carbonated soda/beverage
  • 1-2 TBSP unsalted butter, melted

Directions

Preheat oven to 375 degrees F.

In a mixing bowl, whisk together dry ingredients.

Add carbonated soda/beverage, like 7UP all at once. Mix vigorously for 20-30 seconds, just until well combined. Batter will be thick and lumpy.

Scrape and spread batter into a greased 9x5inch loaf pan.

Bake in the oven 35-40 minutes, until sides separate from pan and knife in the center comes out clean. Turn out onto rack to cool for at least 30 minutes before serving.
