I love to use Grain Amaranth for a cereal dish because you don't have to do anything but mix the grain with some boiling water and cook for 20 – 30 minutes. It even works great in a rice cooker – just set and forget. Amaranth is pretty neutral tasting except for a slight nutty flavor, so you can spice it any way you want.

In the winter when you're running out of garden produce and need something good to keep you warm, your Amaranth will be there. Just a small space in your garden will produce a lot of grain, because 1 plant can yield one pound of grain. Hard to imagine that much grain can come from one little seed.
